The holidays are over and we are back to the daily schedules and routines that keep us busy until dinner time rolls around and our family is starting up the rumblings of "what's for dinner?"
Quick and easy takes center stage in our minds as we inventory the fridge, freezer, and pantry for anything and everything we can find to solve the dinner dilemma.
Here is why this recipe is a winner:
Done in 30 minutes (or less if the chicken is pre-cooked)

Penne with Chicken & Broccoli Casserole
Ready in 30 minutes
Serves: 8
INGREDIENTS:
1 (16 ounce) box of penne, cooked
2 (16 ounce) jars of alfredo sauce ( I like RAO's brand)
4 cups cheese, shredded and divided in half ( I used a mixture of mozzarella & parmesan)
1 bunch broccoli, cut into bite-size pieces & cooked
3-4 boneless, skinless chicken breasts, seasoned with salt and pepper, cooked and cut into bite-size pieces
DIRECTIONS:
Set oven to 350 degrees.
Grease a 13x9 pan.
In a large bowl, mix all of the ingredients except for 2 cups of cheese.
Stir gently until well combined.
Pour into the prepared baking dish and sprinkle the rest of the cheese over the top.
Bake for 10 minutes or until hot and bubbly.
